Sabatini is an Italian gin brand founded in Cortona, Tuscany, in 2015 by four members of the Sabatini family, producing both a London Dry gin and a 0.0% AF botanical product made from estate-grown Tuscan ingredients.
The founding group comprises Ugo Sabatini, his sons Enrico and Niccolò, and cousin Filippo. The family's connection to distilled drinks has older roots: Ugo's grandfather, Guglielmo Giacosa, was an oenologist who managed a Cinzano factory in Bolivia and later in Melbourne before the Second World War. The current brand took shape after Filippo met bartender Alessandro Palazzi in London, who connected the family with master distiller Charles Maxwell at Thames Distillery. That production partnership is acknowledged on the packaging.
Botanical sourcing for the AF product draws on Villa Ugo, the family's estate in Cortona. Sabatini 0.0 is produced through infusion of five plants from the estate: sage, thyme, olive leaves, lavender, and lemon verbena. The product contains no sugar, no sweeteners, no colourings, and no artificial flavouring, and is vegan-certified.
Sabatini 0.0 occupies a narrow niche among European AF botanical spirits: a single 0.0% product available through specialist AF retailers and sitting in the premium bracket. The Italian estate framing connects it to wine and olive oil tradition as much as to spirits. The Villa Ugo provenance story is more geographically specific than most entries in the AF spirits category, with each botanical traceable to a named family estate in Cortona, making the ingredient sourcing a central part of the brand's identity rather than incidental detail.
