Whissin

The brand name is a portmanteau of 'whiskey' and 'sin', the Spanish word for 'without', which captures its positioning directly. Industrias Espadafor was founded in Granada in the 1930s by Juan Espadafor and has since grown to export to more than 50 countries. The company produces a broader portfolio of alcohol-free spirit alternatives from the same Granada base.

Whissin's production method distinguishes it from the large majority of contemporary AF spirits. The main ingredients, barley, maize, and wheat, are the same cereal grains used in conventional whiskey production. Rather than fermenting those grains into an alcoholic spirit and removing the alcohol afterwards, Whissin never ferments them at all. The grains and botanicals are macerated to extract their flavour compounds: steeped rather than fermented, so no alcohol is produced at any stage. This built-from-scratch approach stands in contrast to dealcoholisation, where a spirit is made at full strength and the alcohol is then separated out.
