Everleaf is a London-founded alcohol-free aperitif brand launched in 2019 by Paul Mathew, a conservation biologist and bartender with over 25 years in the drinks industry. Mathew spent more than a year researching plants, sustainable sourcing, and extraction techniques before the brand launched, approaching the formulation challenge from a science background as much as a bar background.
The range comprises three alcohol-free aperitifs, each inspired by a distinct natural ecosystem, giving Everleaf a coherent identity that extends across the portfolio rather than replicating a single spirit style. The brand expanded in November 2020 to complete the trio, and operates as an independent company through Everleaf Drinks Ltd, registered in the UK.
Botanical complexity is extracted through multiple techniques: steam distillation, maceration (soaking the botanical material directly in liquid to draw out its flavour), and CO2 extraction, each capturing different aromatic compounds from the plant ingredients. Mouthfeel, a persistent challenge in alcohol-free formulation, is addressed through plant-based stabilisers including acacia gum and konjac, the latter a root plant used to add body and texture without alcohol. This level of technical and biological specificity reflects Mathew's conservation science background as much as his bartending career.
The absence of alcohol means Everleaf had to solve the structural and sensory questions that alcohol usually handles silently in a drink: viscosity, warmth, and the way flavour lingers. The plant-based approach to those challenges is part of what makes the brand distinctive in the alcohol-free botanical spirits space. The brand does not describe itself as a gin alternative or a vermouth replacement, but as its own proposition entirely. That independence of form makes it particularly relevant to sober-curious drinkers exploring what the AF spirits category can offer beyond spirit substitutes.
Distribution is through specialist alcohol-free retailers and direct-to-consumer via the brand's own site, with the range also finding a home in high-end bar programmes. Pricing sits in the premium bracket, consistent with the production approach and the focused range.
