
NessAlla
NessAlla is a women-owned kombucha producer based in Madison, Wisconsin, founded in 2008 by Vanessa Tortolano and Alla Shapiro. The founders, who call themselves the Kombucha Queens of the Midwest, first brought their kombucha to the Madison East Side Farmers Market, and the brand grew to become one of the first craft kombucha producers in the United States.
The brewing process uses SCOBYs (symbiotic cultures of bacteria and yeast, the live cultures that drive fermentation), reverse osmosis purified water, and custom blended Rishi teas. Seasonal varieties draw on wild crafted herbs. NessAlla's alcohol-free kombuchas suit sober-curious drinkers and those seeking a live-fermented drink. One of its drinks has picked up awards.
The brand is entirely women-owned. NessAlla operates on 100% green electricity and composts all its organic waste on urban farms. It is a 1% for the Planet partner and donates at least 10% of its product to raffles, charities, and fundraisers.
