
Allacher
Allacher is an Austrian winery founded in 1960, producing an alcohol-free range of red, white, and sparkling wines alongside its conventional portfolio, with alcohol removed using a gentle vacuum process.
The winery operates in Austria's Pannonian wine-growing region, the warm, continental eastern lowlands that favour full-bodied red grape varieties. Allacher focuses on characteristically Austrian cultivars including Zweigelt, Blaufränkisch, and St. Laurent, grapes that are widely grown in the region but rarely found outside Austria. These same varieties form the base of both the conventional and alcohol-free ranges.
For the AF wines, alcohol is removed from the finished wine using vacuum distillation at reduced pressure, a method that lowers the boiling point and protects the delicate aromatics that would be damaged by conventional high-temperature evaporation. The winery describes the process as particularly gentle, preserving more of the original wine's character than harsher de-alcoholisation approaches allow.
The alcohol-free range covers reds, whites, and sparkling wines, giving sober-curious and pregnancy-safe drinkers access to the full width of Austrian wine styles from a single producer. With more than six decades of viticultural history at the same site, Allacher brings an unusual depth of winemaking heritage to its AF range.
