Higson started the brand during her first pregnancy, frustrated by the sweetness and lack of complexity in existing AF options. She drew on the American tradition of switchel, a vinegar-based drink made from apple cider vinegar, ginger, and honey with roots in pre-Prohibition American folk culture, to develop something with genuine structure and acidity. Mother Root is an independent, female-founded micro-producer based in Peckham, South London.

The production process centres on a slow, small-batch maceration: botanicals are steeped in vinegar over several weeks to extract concentrated, layered flavour. Apple cider vinegar forms the backbone of every product, providing the bite and depth that Higson was looking for when nothing else on the market satisfied her. The result sits firmly in the AF botanical aperitif category rather than AF beer or wine, and the format, a concentrated bottle designed to be diluted with soda or tonic, makes the serve closer in ritual to a classic aperitif than to a ready-to-drink product.
