The brand's production method distinguishes it from most of the alcohol-free spirits category. Rather than building flavour from scratch using botanical infusions or macerations, Sober Spirits starts with real spirits and removes the alcohol, a process known as dealcoholisation in which the alcohol is separated from the base liquid while the flavour compounds remain intact. The rum variant is derived from a real three-year-old French rum that goes through this process.
