The Stillery

The brand traces its origins to Delft, where Pascal secretly distilled his first spirit in the bathtub of his student home, before the three founders established a home distillery in an attic. The Stillery works with three pot stills and produces 6,000 bottles each year. It is the only distillery in the Netherlands that produces its own pure alcohol rather than buying it in.

The production approach draws on local, sustainable ingredients. Organic spelt grain is among the raw materials; gin is partly made from old bread; grape pulp from Amsterdam-based wine producer Chateau Amsterdam contributes to a grappa. The Stillery uses recycled glass in its bottles and plants a tree for every litre produced.

The gin range draws on botanicals including wild thyme and bramble leaves. The portfolio's alcohol-free spirit provides an option for sober-curious drinkers and designated drivers. One of the brand's drinks has picked up awards. During the first lockdown of the Covid-19 pandemic, The Stillery redirected production to hand sanitisers, disinfecting three million hands.
