Two Roads Brewing
Two Roads Brewing is a Connecticut craft brewery, founded in Stratford in December 2012 and named after Robert Frost's poem "The Road Not Taken". The brewery was established by four friends, including co-founder Brad Hittle and brewmaster Phil Markowski, around a founding philosophy of taking the road less travelled. Their chosen home was the former U.S. Baird Factory, a vacant brick building dating to around 1911, which required a $600,000 cleanup of contaminated soil, asbestos, and lead paint; the brewery also received a state grant of $500,000 to assist with remediation.
Named one of the ten best breweries in America by Paste Magazine and counted among the Top 50 Independent Craft Breweries, Two Roads also contracts to brew beers for other producers alongside its own output. In 2019 the brewery opened Area Two Experimental Brewing, a second on-site facility dedicated to experimental and sour beer production.
The brewery has invested substantially in sustainability. A 70-panel solar energy system was installed in 2014, underground cisterns collect rainwater, rinse water is captured and reused, and spent grain goes to local farms. Two Roads has also pursued a wetlands restoration project and channels proceeds from its Shore 2 Pour community run to the Audubon Society. Brewmaster Phil Markowski has isolated yeasts from strains found in the brewery's hop yard and from ambient air captured during Superstorm Sandy.
The brewery produces an alcohol-free IPA alongside its alcoholic range; that beer has picked up awards. Two Roads operates with a family-friendly policy and furnishes its tasting rooms with reclaimed wood sourced from Connecticut tobacco barns.
