About This Drink
The name is honest about what this is: a version one. Bellwoods released it after months of internal development, not as a finished product but as something close enough to share. It sits in gose/sour territory, built around lactic acidity and fermentation esters rather than anything more elaborate. The dry hopping brings a citrusy lift to the nose — grapefruit and light florals over peach and apricot from the fermentation. On the palate it's light-bodied with gentle carbonation, the sourness sitting cleanly without dominating. The finish is tart and short, fading quickly. It's now sold out. What it shows is where Bellwoods started with non-alcoholic brewing and how different the brief was from the fuller Jelly King that followed.
