About This Drink

Pink Salt is Proxies' rosé-style still wine alternative, built on a base of Pinot Blanc grape juice and Niagara verjus. A strawberry vinegar element and hibiscus tea give it both colour and a berry tartness that grounds the whole thing. It pours a soft pink. Strawberry and rhubarb come first on the nose, with a herbal sage note adding something unexpected and interesting. White tea and hibiscus add floral depth. On the palate, the strawberry and citrus are bright and fresh, the rhubarb lending tartness, and a Sichuan peppercorn finish providing a distinctive tingly heat that lingers. Sea salt ties it together with a clean, savoury edge. Serve chilled in a white or rosé wine glass. Works well as an aperitif or alongside smoked fish, oysters, soft cheeses, and fresh herb dishes.
