The gose style is built on wheat, tartness, and salt; Athletic's version swaps the conventional coriander for dill seed, and adds cucumber concentrate and Himalayan salt to the spice blend alongside peppercorn, yellow mustard seed, garlic, and vinegar. The dill is genuinely herbal and grassy rather than synthetic, backed by a faint brine from the salt and cucumber freshness that takes it somewhere close to a pickle brine profile, the hop character minimal and background.
