Here, Chardonnay grape concentrate stands in for the fizz, with organic elderflower extract and lavender keeping the floral character intact. Green tea with jasmine adds a quiet tannin backbone, and juniper extract brings a faint dryness. The colour is pale straw with fine, persistent bubbles. The aroma is elderflower upfront, then lavender and a thread of lemon zest. On the palate it's light-bodied and crisp, with the white grape sweetness balanced by the dry bitterness of gentian root. The jasmine sits quietly in the background, adding a layer of complexity without intruding. Serve in a coupe, well chilled, with a twist of lemon peel.
