About This Drink
This is a one-off collaboration cuvée that stands apart from Moderato's Originale and Révolutionnaire sub-ranges, produced in partnership with Château Sigalas Rabaud, a Premier Cru Classé estate in Sauternes. The aim, as stated at launch, was to offer a non-alcoholic alternative to the traditional botrytized dessert wines of the appellation. The base is Sémillon, harvested by hand through successive selective passes to gather only grapes affected by Botrytis Cinerea (noble rot), the fungus responsible for the concentrated richness associated with classic Sauternes. Before alcohol removal, the wine was aged in oak barrels for several months. The brand describes the resulting profile as carrying notes of candied fruit, honey and spices.
