Moderato Blanc de Noir Sparkling represents the brand's move into a more gastronomic register within its sparkling portfolio, drawing on the Blanc de Noirs style traditionally associated with Champagne. It is made from 100% Grenache sourced from vineyards in the South of France holding HVE (High Environmental Value) certification. Dealcoholisation uses vacuum distillation at low temperatures (30 to 35°C), a technique chosen to preserve the wine's volatile aromatic compounds rather than drive them off through heat. Moderato describes the resulting profile as vinous, with notes of small red fruits, placing the Blanc de Noir in a distinctly different character from the Cuvée Révolutionnaire and Cuvée Originale lines that make up the rest of the range.
