Omnipollo Noa Pecan Mud Cake started as a homebrew recipe by Omnipollo founder Henok Fentie, conceived as a dessert beer modelled on the Swedish Kladdkaka. The non-alcoholic version was engineered to retain the thick, viscous mouthfeel of the original high-ABV Imperial Stout, a challenge the brand took on explicitly to avoid the body loss common in non-alcoholic brewing.
