Proxies Crisp White is the still white-wine alternative in the Proxies range, sitting alongside the sparkling Bubbly White variant. Proxies was created by Acid League, a Canadian food and drink company known for ingredient-led formulations. Built from scratch rather than dealcoholised, it uses Niagara verjus as its base, with quassia bark (a bitter tropical wood used historically as a flavouring agent) adding structure alongside lychee and ginger.
