Saicho's Eight Immortals is an alcohol-free sparkling tea built on Dan Cong oolong, a rare variety grown on Phoenix Mountain in China's Guangdong Province. The leaves are hand-harvested in early spring and cold brewed for 24 hours before the tea is sparkled, with production overseen by a qualified tea master. The aroma carries nectarine, ginger, sweet baking spices and confit peach. To taste it brings ginger, mango, tangerine and melon, with a bitterness reminiscent of blood orange and herbal anise, fennel and tarragon. This award-winning tea pairs well with soft cheeses or lightly spiced dishes such as harissa roasted squash.
