The fruit is sourced from premium South Australian vineyards, selected specifically for their ability to retain varietal character through the dealcoholisation process. Alcohol removal uses spinning cone technology operating at low temperatures, a method chosen to strip the alcohol gently while preserving the delicate aromatics that define Sauvignon Blanc. At 0.5%, the wine sits in the low-alcohol rather than fully alcohol-free category.
