David Begg stopped drinking alcohol and found that sophisticated non-alcoholic options were scarce when dining out. The gap he identified in upscale restaurants and wine-list occasions led him and Hodgson to establish REAL Kombucha with a specific structural choice: the range would be fermented from high-quality loose-leaf teas without any additions. All the complexity in the glass comes from the tea leaves themselves and the fermentation process, giving each variant a character determined entirely by its tea origin rather than added ingredients.

The range is structured to echo the conventions of sparkling wine. Individual variants are named and categorised to signal dryness and style in the way that wine terminology does, drawing on tea origins as diverse as pan-fired Dragonwell green tea from Zhejiang province in China, First Flush Darjeeling, and White Peony. Each tea brings a distinct profile to the ferment, producing a lineup that covers dry, medium, and blush styles without tasting like flavoured soft drinks.

REAL Kombucha operates from a dedicated fermentation facility, which it calls the Fermentery, on the Waddesdon Estate in Buckinghamshire. In 2021, the brand secured £2.5 million in investment to expand production at that site. The parent entity subsequently rebranded as REAL Drinks, signalling ambition beyond kombucha and into the broader sparkling wine alternative space.

Distribution spans mainstream supermarkets and specialist online retail, alongside a strong presence in high-end hospitality including more than 60 Michelin-starred restaurants. The range sits firmly in the premium bracket and appeals particularly to sober-curious drinkers who want something structured and occasion-appropriate at the dinner table rather than a soft drink.
