Schönbuch Braumanufaktur is a German brewery founded in 1823 in Böblingen, Baden-Württemberg, and the oldest still-operating business in the town. Karl Gottfried Dinkelaker established it at the market square in Böblingen; the brewery moved to its current location at Postplatz in 1829, and its beer cellars were carved into the rock in 1824. By 1860, Karl Gottfried's sons Christian and Wilhelm had taken over, and in 1898 Wilhelm passed the brewery to his own sons, Wilhelm and Hermann. Bottled beer arrived in 1903. The name Schönbuch Bräu was introduced in 1906, a reference to the nearby Schönbuch forest, and the brewery was renamed Schönbuch Braumanufaktur in 2010.

The Dinkelaker family in Böblingen dropped the 'c' from their surname to avoid confusion with the Stuttgart brewery bearing a similar name. Six generations of the family have run the brewery, with the sixth taking over at the end of 2022; it is now led by Tina Gatty and Werner Dinkelaker. The brewery has 30 employees.

The range spans lagers, wheat beers and craft beers, totalling over 15 varieties, brewed using regional ingredients. In 2022 annual output was between 40,000 and 50,000 hectolitres. The brewery operates brewpubs in Böblingen, Stuttgart, and Calw, alongside around a dozen restaurants.

Schönbuch Braumanufaktur introduced an alcohol-free wheat beer in 2007 and in 2018 acquired a dealcoholisation plant. The alcohol-free beer is produced by brewing at full strength and removing the alcohol using gentle membrane filtration. It is classified as a Vollbier and contains vitamins. One of its alcohol-free drinks has won awards.
