Carly and Ian Blessing brought fine-dining credentials to the project: both worked as sommeliers at The French Laundry, the three-Michelin-star restaurant in Napa Valley, before deciding to step away from alcohol following the birth of their two children. That combination of professional palate and personal motivation shaped the brand's approach from the outset.

The defining technical choice at All The Bitter is its solvent. Traditional cocktail bitters extract flavour from botanicals using alcohol as the carrier liquid; All The Bitter replaces this with organic vegetable glycerin, a plant-derived substance that performs the same extraction function with no ABV. The maceration process takes several weeks, drawing out the full character of each botanical blend. The botanicals include dandelion root, burdock, and milk thistle, giving the range both flavour depth and a functional, plant-forward profile.

The core range spans classic aromatic, citrus, and New Orleans-style bitters, supplemented by limited seasonal releases. The aromatic style takes its cues from the Angostura profile, built on warming spices including cinnamon, nutmeg, and clove. The New Orleans-style variant draws on the Peychaud's tradition, featuring anise, tart cherry, and hibiscus. Both anchor the range in recognisable bitters territory while removing the alcohol that makes conventional bitters unsuitable for fully alcohol-free drinks.

All The Bitter sits at the premium end of the alcohol-free cocktail ingredient category and is available through specialist alcohol-free retailers internationally.
