About This Drink
All The Bitter was founded by Carly and Ian Blessing — former sommeliers at The French Laundry in Napa — who set out to build non-alcoholic bitters that actually work in cocktails. The Aromatic Bitters are their flagship, designed to do what Angostura does without the alcohol. The base is vegetable glycerin rather than spirit, which gives these bitters a slightly different texture — a touch more viscous than you might expect — but the botanical hit is very much there. Gentian root provides the bitter backbone, while dandelion, burdock, milk thistle, and holy basil add complexity. Orange peel and ginger round things out. All botanicals are organically grown or wild foraged from Somerset and California suppliers. A few dashes into tonic water alone is genuinely pleasant. In a non-alcoholic Old Fashioned they do exactly what you need: adding depth and structure that would otherwise be missing. The glycerin base means they don't integrate in quite the same way alcohol-based bitters do, but for anyone building a zero-proof bar, this is one of the most credible options on the market.
