The Very Cautious One wines are produced by fermenting grapes to full strength before removing the alcohol using a spinning cone column, a low-temperature method that separates alcohol from the finished wine without applying the high heat that would damage aromatic compounds. The spinning cone process passes the wine through a series of rotating cones under reduced pressure, extracting alcohol gently whilst retaining as much varietal character as possible.

Fizzero was developed in collaboration with a UK-based wine buyer and extends the portfolio into sparkling styles. Both lines are available through specialist alcohol-free retailers and sit in the premium bracket for the category.
