The brand was co-founded by Maggie Frerejean-Taittinger, a former director at the Michelin Guide with family ties to the French champagne world, and Constance Jablonski, a French fashion model. The concept emerged when Frerejean-Taittinger was pregnant with twins and found no sophisticated, organic, alcohol-free alternative available for the kind of celebratory occasions she attended. That gap defined the brief precisely: a premium sparkling wine designed to stand on its own merits.

French Bloom uses a cold vacuum distillation process to dealcoholise its wines. Vacuum distillation works by reducing the pressure inside the still, which lowers the boiling point of the liquid and allows the alcohol to be removed at lower temperatures, preserving the delicate aromatics that would otherwise be damaged by heat. The brand identifies this method as central to maintaining the original flavour and aroma of each wine.

All French Bloom wines are certified 100% organic and vegan, with no added sugar. These are foundational commitments built into the production model from the start. The range spans several sparkling styles alongside an annual vintage series: the La Cuvée 2022 was positioned on launch as the world's first vintage alcohol-free sparkling wine, a claim that drew considerable trade attention and helped establish the brand's reputation in the luxury hospitality channel.
