The dealcoholisation process involves triple vacuum distillation at low temperatures, progressively reducing the alcohol from around 14% through two intermediate stages to reach 0.0%. The base is certified organic Chardonnay. As an alcohol-free sparkling wine, L'Extra Brut takes the drier, brut-style direction in a range that also includes still white and rosé expressions.
