NOA

The brand was founded by Patrice, whose interest in creating alcohol-free spirits and cocktails stretches back to 2014, when he first presented his experiments at a convention in Las Vegas. That early work led to NOA, produced under the Monsieur Cocktail company and based in Canada.

NOA takes its inspiration from European liqueur traditions, specifically the Italian practice of macerating herbs, roots, spices and citrus to bring depth to the finished product. The production method combines ancestral maceration techniques with modern approaches to blending natural extracts and flavours. Maceration, in this context, means steeping botanical ingredients in a liquid base over time so they release their natural oils, resins and aromatics.

The range spans alcohol-free spirits alternatives across categories associated with Italian and European drinking culture: amari, aperitifs, gin alternatives, vermouth styles, rum-style formats, and orange liqueur alternatives, alongside ready-to-serve cocktail variants. Among them, an amaretto alternative is made using Canadian maple syrup, placing a local ingredient within an Italian-rooted style. One of the brand's drinks has picked up an award since launch.
