Pale Fox
Pale Fox is an Italian Prosecco brand, founded in 2018 by Harry Cooke and Mark Hill in the Asolo-Montello DOCG appellation, that produces alcohol-free sparkling wine alongside its conventional range. The brand draws its grapes from the Valley of the Foxes, working with Glera, Pinot Grigio and Pinot Noir across its sparkling wines.
The conventional Prosecco Superiore DOCG is fermented slowly over a period of 100 days or more. The alcohol-free sparkling took four years of development before release. It is made using Direct Osmosis, a process in which the wine passes through semi-permeable membranes at a low pressure of 1.5 to 2 atmospheres to remove alcohol without applying heat. The finished wine contains only a small amount of sulphites.
Pale Fox uses 100% renewable energy in production and ships with carbon-neutral couriers. Through a partnership with Ecologi, a tree is planted for every order placed.
