Pale Fox Alcohol Free comes from a single estate in Italy's Asolo-Montello DOCG (Valle delle Volpi, the Valley of the Foxes), blending hand-picked Glera from the estate with Pinot Grigio sourced from Friuli. The base wine undergoes 90 days of secondary fermentation, three times the industry standard, before alcohol removal via direct osmosis at just 1.5-2 atmospheres (most methods use around 50 atmospheres). The wine is fined with bentonite clay rather than animal-derived agents, and contains no added stabilisers or preservatives.
