Pastore Brewing and Blending is a Cambridgeshire sour beer brewery founded in 2019 by father and son Chris and Ben Shepherd, with an alcohol-free range launched in 2022.

The brewery is based in Waterbeach, Cambridgeshire, and takes its name from the Italian word for shepherd, a nod to the founders' surname. Pastore's identity centres on the sour and wild ale niche: production is split between fresh sours and a barrel-ageing programme for its alcoholic releases. The brewery self-describes as a producer of modern wild ales, and that framing applies across both the alcoholic and alcohol-free parts of the range.

The alcohol-free Sorbetto series, launched in 2022, extends this sour-beer identity into the 0.5% space. Each Sorbetto is brewed using a specific yeast strain that naturally produces very little alcohol during fermentation, meaning the beers are not dealcoholised after the fact but kept at near-zero strength from the start of the brewing process. The range is designed to carry the profile of a fruit sorbet: high fruit content built on a tart, acidic sour base.

Distribution for the Sorbetto range runs through specialist alcohol-free retailers, consistent with Pastore's overall independent and craft positioning. Sober-curious drinkers who already seek out sour and wild styles in the craft beer world are the natural audience here: the Sorbetto beers are a direct extension of the brewery's house character, not a simplified gateway product.
