Tomonotomo
Tomonotomo is an alcohol-free distilled agave spirit from Oaxaca, Mexico, whose name translates from Spanish as "I drink, I don't drink." The brand was founded by Amanda Chen, a former bartender who spent a decade working in the hospitality industry, after a visit to Oaxaca City led her to develop an agave spirit inspired by the mezcal production process.
Production takes place in Oaxaca. Tobalá agaves are roasted in a pit oven, naturally fermented and then distilled through copper stills. A third pot in the distillation process is dedicated to botanicals, incorporating smoked pineapple and local botanicals; the finished spirit contains 14 ingredients and uses no artificial flavours, preservatives, or citric acid. The proprietary method behind it took two years to develop.
The brand launched through a Kickstarter campaign that raised $10,000 in 30 days. One of its drinks has picked up awards. Tomonotomo is positioned for sober-curious drinkers and those observing Dry January who want an alcohol-free agave spirit.
