Tomonotomo Tobala is a distilled alcohol-free agave spirit made in Oaxaca, Mexico, the world's first distilled non-alcoholic agave spirit and Mexico's first all-natural one, and an award-winning release. It is made from wild Tobala agave, roasted in traditional earthen pit ovens at local palenques, then fermented and run through copper stills custom-built in Ocotlán, a true distillation rather than a flavoured blend. Among its botanicals are pasilla mixe chili and flor de cacao. The taste carries smoked agave with chili warmth, backed by cardamom, nutmeg and cinnamon, with a floral lift of hibiscus and rose, and it finishes on smoked pineapple.
