Vicaris

The Dilewyns family's presence in Dendermonde spans multiple trades: the family built its history first as tanners before moving into brewing. That layered local identity gives Vicaris a brand background grounded in generations of community activity rather than purely modern beverage-sector origins.

Vicaris's conventional ales are high-fermentation beers brewed using top-fermenting yeasts, a traditional Belgian approach. Many are bottle-conditioned: a second fermentation takes place inside the sealed bottle, building natural carbonation from within rather than through external gas injection. This method is closely associated with traditional Belgian brewing.

The alcohol-free range uses a different production path. Vicaris installed a dedicated dealcoholisation unit, brewing the beer at full strength before removing the alcohol after fermentation is complete. The AF lineup was launched in 2023.
