Hughes brings an unusual background to drinks: his training is in engineering and design, not in food or beverage. That background shaped the development process directly. He spent over two years testing more than 100 recipes before arriving at the brand's signature formula, approaching the problem with methodical rigour rather than bartending instinct. The motivation was practical: a frustration with the overly sweet, syrupy alcohol-free options available in bars at the time. Wilfred's positions itself as a distinctly British take on the aperitif occasion.
