About This Drink
Hip Pop make their kombucha in the same way as most: brew tea, add a SCOBY, ferment, add fruit. Where they stand out is in keeping the sugar levels genuinely low without reaching for stevia or any other sweetener. At 14 kcal per 100ml and 2.6g of sugar, this is about as light as a flavoured kombucha gets. The ginger and yuzu pairing is a good one. Yuzu is a Japanese citrus that works differently to lemon — it has more of a floral, fragrant quality, closer to bergamot than anything sharp, and it softens the ginger rather than amplifying it. The result is a kombucha that has some real bite without being aggressive. The lemon juice in the recipe keeps it grounded. Available in cases of 12 or 24 from Hip Pop direct, as well as through various online specialist retailers. At around 72p per 100ml it is priced towards the premium end of the kombucha market, but the ingredient quality and the absence of sweeteners make it a reasonable proposition if you drink the stuff regularly.
