MAGGIE BAILEY is KAHOL's take on American bourbon: start with the actual spirit, then use a proprietary enzymatic process to remove the alcohol, leaving behind the flavour compounds built up through distillation and barrel ageing. It's a fundamentally different approach from most non-alcoholic whisky alternatives, which are built from scratch using botanical infusions and flavourings. The taste shows it. Oak is prominent throughout, with caramel and candied apple giving sweetness, and almond, toast, and a suggestion of chocolate adding depth in the mid-palate. There's genuine spice on the finish. It works on ice, mixed with ginger ale, or neat for those who want to test how close it gets. Worth noting: it contains cereals with gluten, so it's not suitable for coeliacs. It comes in a 500ml bottle, roughly 20 serves. At the premium end of the AF spirits market, but for serious bourbon drinkers who've struggled to find a convincing substitute, it's among the more credible options.
