New London Light is the non-alcoholic arm of Salcombe Distilling Co., the Devon gin maker, and the Original is their flagship spirit. The production process is more involved than most: botanicals are steeped in neutral grain spirit and water, then distilled in a rotary vacuum still, which removes the alcohol at low temperature without stripping out the flavour compounds. The concentrated distillate is then blended with natural flavours and stabilised with kombucha, which adds a subtle depth. Classic juniper sits at the heart of the flavour, flanked by bright citrus and fresh ginger with habanero adding warmth and a little lift. Orange and sage provide aromatic complexity in the background. It's the closest this range gets to a gin substitute, though it has its own character rather than simply trying to mimic one. The suggested serve is 50ml to 150ml of light tonic, garnished with orange and sage. It's vegan, allergen-free, and 0% ABV. Available in 70cl bottles at around £26.
