About This Drink
BOLLE's Chardonnay Reserve takes a step up from their standard Chardonnay. It begins as AOP Burgundy — proper French wine country provenance — which is gently dealcoholised before undergoing a second fermentation with fresh 2025 Chardonnay juice. The process builds complexity that the base wine would otherwise lose through dealcoholisation. The nose is clean and precise: green apple, lemon and lime, then white acacia flowers behind them, a subtle hazelnut character, and a delicate hint of spice. On the palate, vibrant minerality is the defining note — crisp acidity, medium-light body with a gentle roundness, and a clean medium-length finish. It doesn't try to be buttery or oaky, which works in its favour. At 15 calories per 100ml with 2.8g naturally occurring sugars, it sits at the leaner end of AF whites. Served lightly chilled rather than ice-cold, it shows better.
