About This Drink
Darling Cellars sits on South Africa's cool Atlantic coast, and this sparkling rosé draws on the same Sauvignon Blanc and Grenache combination that runs through the brand's still rosé range. The alcohol is removed using spinning cone technology, which works at low temperature under vacuum to preserve more of the grape character than conventional heat-based methods. CO2 is then added to produce the bubbles. In the glass it's a pale blush pink with lively, persistent effervescence. The nose is fruity and fresh — ripe strawberry up front with a floral edge and a hint of citrus zest. On the palate the fruit carries through cleanly, the carbonation keeping things bright and preventing it from feeling flat or soft. It finishes crisply without much lingering sweetness. At 0.5% ABV it sits in the standard dealcoholised category. Works well as a celebration stand-in or a straightforward aperitif.
