About This Drink
Jalisco 55 is Spiritless's attempt to do for tequila what Kentucky 74 did for bourbon. The name follows the same logic — 55 calories per serving when used in their "Halfsies" half-and-half concept with real tequila, though it also works on its own. The process is the same proprietary reverse distillation that underpins the whole Spiritless range: building the spirit from the ground up using real oak, rather than stripping alcohol from an existing base. The flavour profile is aimed squarely at reposado territory. Sweet agave is the through-line, with citrus and mint giving it the brightness you'd expect, and oak adding a gentle structure underneath. It's not quite the full tequila experience — that distinctive agave sharpness is softer here, and the finish is shorter than you'd get from the real thing — but in a margarita or a paloma it holds up convincingly. Jalisco 55 has since been discontinued from the Spiritless website, though stock still turns up at various AF specialist retailers. Worth picking up if you come across it. Vegan and gluten-free.
