About This Drink

Lemon aspen grows in Far North Queensland on the Kuku Yalanji lands. It's a small, sour citrus fruit with a sharp aromatic quality distinct from ordinary lemon. Sobah uses it as a post-fermentation botanical in this Czech-style pilsner, alongside dry hopping, to get a layered citrus character rather than a flat fruit addition. The pour is pale golden with a fine white head. The nose is bright and citrusy - lemon forward, with a grapefruit note and something slightly floral and tropical that nods toward lychee. The palate is light and crisp, clean through the middle, with a bitter finish that's more pilsner-like than many alcohol-free examples manage. Brewed from the outset without producing ethanol, vegan-friendly, and preservative-free.
