About This Drink
Oddbird C is drawn from the 2022 vintage in France's Grand-Est region, five years in development. The blend of Chardonnay, Pinot Noir, and Meunier follows traditional Champagne production methods, with 24 months of ageing before dealcoholisation at low temperature. It is available only via waiting list, which tells you something about how seriously Oddbird treat it. The pour is a luminous pale gold. On the nose, creamy brioche and toasted bread sit alongside bright citrus and stone fruit. The palate is layered and precise: silky in texture, with citrus, red berry, and a soft mineralité running through the mid-palate. The mousse is fine and measured, supporting the wine rather than dominating it. The finish is long and balanced, with a refined sweetness that fades cleanly. It is genuinely impressive for a dealcoholised wine. The extended ageing gives it a depth and structure you don't often find in this category, and the silky texture holds up through the glass.
