Proxies Brut Rosé is a bottle format, designed for the table rather than a can on the go. It pours pale blush with fine bubbles and the nose leads with tart raspberry and lemon zest, jasmine tea sitting underneath and adding something floral and slightly green. On the palate, the raspberry carries well with good acidity alongside it. Summer peach comes in mid-glass and the finish is floral and fragrant, with ginger extract adding a small kick of warmth at the end. Sencha and jasmine teas provide the structural backbone, giving a dryness that makes this feel more like wine than juice. It doesn't pretend to be Champagne but it has a genuine composure to it. Serve cold in a flute. Works as an aperitif or alongside sushi, soft cheese, or anything savoury with a sweet edge.
