Bubbly White is a joint project between Proxies and Nomadica Wines, framed around the coastal whites of the Mediterranean. It comes in a can and pours pale straw with active bubbles. Peach and grapefruit zest open the nose, with lilac and a hint of mint adding a distinctive floral quality. On the palate, peach and pineapple carry through, the grapefruit peel extract lending a slightly bitter citrus edge. Sea salt comes in at the finish with a clean, mineral character that genuinely distinguishes this from other canned wine alternatives. Kambaa black tea and hibiscus provide the underlying structure. It's bright and aromatic rather than weighty, with a freshness that plays well in the heat. Serve cold in a wine glass or straight from the can. Good alongside salads, light seafood, or outdoor lunches.
