Rooibos is what separates Cape Malt from a straightforward whisky imitation. The South African herbal plant brings an earthy, slightly tannic quality that sits alongside vanilla and caramel rather than competing with them. Peated malt provides the Scotch-leaning smoke, present but measured. American oak and corn introduce a bourbon-leaning sweetness. The result sits between the two whisky traditions, using rooibos as the pivot point. The malt content means it is not coeliac-safe.
