About This Drink
BOLLE's patent-pending production takes a different route to most AF sparkling whites. After dealcoholisation, the wine undergoes a second fermentation — fresh juice and yeast go back in, then CO2 is added. The result has more going on than the usual carbonated-grape-juice-in-a-flute approach. It pours gold and clear, with fine persistent bubbles. Citrus dominates the nose — clean lemon zest, grapefruit, and lime, with an orange peel edge. As it opens up, tropical notes of mango and green apple appear, along with a thread of minerality and faint honey. The palate is medium-dry with medium acidity, following the nose faithfully before the mid-palate takes a more interesting turn: toasty bread notes and a whisper of cedar and nutmeg give it warmth and some complexity. The finish runs medium to long. Scored 91 points in Wine Enthusiast and 93 in the London Wine Competition 2025 — benchmarks that suggest it performs well against the broader sparkling wine field, not just within the AF niche.
