About This Drink
BOLLE Grand Reserve Blanc de Blancs is an alcohol-free sparkling wine, made mostly from alcohol-free Chardonnay wine blended with a smaller portion of Silvaner grape juice. BOLLE describes it as the first lees-aged non-alcoholic wine: a secondary fermentation builds its carbonation, then it rests for nine months sur lie, sitting on the spent yeast left behind by fermentation, which gives it a creamy texture and brioche character. The aroma carries apricot, nuts and a touch of citrus. To taste it is creamy with sharp acidity, and the bubbles are fine and delicate. It is served in more than 75 Michelin restaurants worldwide.
