About This Drink
Cognato Cabernet Sauvignon is an alcohol-free wine made from Cabernet Sauvignon grapes grown in South Africa's Coastal Region, hand-picked at full maturity. The grapes undergo maceration (soaking with the grape skins to extract colour and tannins) before the alcohol is removed using a vacuum spinning cone method, meaning the wine is first fermented at full strength and the alcohol then extracted under low pressure to preserve aroma. On the nose, the wine has blackcurrant and dark cherry, with oak and tar. The palate is slightly jammy, with black cherry, plum, and a touch of spice. It pairs well with roasted meats, hearty stews, and rich pasta dishes.
