BLÅ, which means blue in Danish, is an award-winning alcohol-free sparkling tea made by Copenhagen Sparkling Tea in Denmark. It blends black, white and green teas, and the teas are rested for two to three months before the drink is made. It is bottled under high pressure, around 5 bars, which gives a firm fizz. The aroma carries jasmine, chamomile and a touch of citrus. The taste is round, drawn from a selection of white teas, with added complexity from the green teas, and it stays lightly sweet while crisp and refreshing. A long finish brings tannins from Darjeeling First Flush tea, the slightly drying, grippy edge that tea leaves can give. It is light green in colour with yellow tints, and is meant as an aperitif or after-dinner drink.
