Elton John Zero Blanc de Blancs is an alcohol-free sparkling wine made entirely from Chardonnay grapes, the blanc de blancs approach of using only white grapes. It is produced in Germany in collaboration with Benchmark Drinks. Rather than brewing at strength and then removing the alcohol, it is made through a controlled fermentation that uses select bacteria instead of yeast, so no alcohol forms at any stage, and it is then gently carbonated. The recipe also adds an infusion of green tea extract. It tastes crisp and light, with green apple, honeysuckle and citrus blossom carried on fine bubbles. The finish is clean, with gentle pear and a mineral edge.
